Summer and Garden Quiche

I know I know...SLACKER!!  This has been a great summer for us, trips to the beach, camping, bowling, family barbecues, gardening, canning.   A few pictures from our potted garden, few beach pictures, and a garden quiche recipe.

Here is my recipe for Garden Veggie Quiche:

1Tbsp. Butter
1/2 C. Panko bread crumbs (toasted)
1 C chopped cherry tomatoes (or whatever tomatoes you like, chopped)
3/4 C diced zucchini
3 Tbsp. chopped herbs (Pick your fav, I used parsley, basil, and chives)
5 eggs
1/4 C half and half
1/4 C shredded  cheddar cheese (I used american slices because that is what I had on hand)

DIRECTIONS:


Melt butter in skillet with breadcrumbs toast until golden.
Meanwhile spray a pie dish with non-stick cooking spray.






   Place crumbs in sprayed pie plate, add chopped veggies
   and herbs on top of crumbs.Sprinkle cheese over vegetables and          herbs.




Next beat eggs in a separate bowl and mix in half and half.





Pour the egg mixture over the vegetable mixture and bake in a 400
degree oven until the center of quiche is set approx. 20 minutes.

St. Patrick's Day....

Yeah this winter really has been a pooper for me.  The kids did take up skiing, but other than that I could have hibernated and been totally fine with it.  However spring is around the corner, so with that coming I hope my mood gets better and brighter.  We made some shamrock sugar cookies using a great recipe I found on Pinterest a while back.  Here is the link for the  SUGAR COOKIE we used a ROYAL ICING to color and decorate them.  The kiddos had fun, of course I was on clean up duty.  Happy St. Patrick's Day and COME ON SPRING!!!!

Updates

We survived yet another holiday season...YAY for us ;)   I have taken all the Christmas decorations down (January 25th the last of them came down).   Hunter and Hope started skiing this year, and I must say they LOVE it.  Holley was accepted into the National Honor Society last week, such an honor and she is so proud of herself and her hard work.  Hunter celebrated his 14th birthday yesterday.  Hannah is trucking along in her transition to "adulthood".  Life is Good
